Adam Richman's Lamb Burger

Adam’s Lamb Burger
Serves 8
Ingredients:
2 pounds ground Lamb
1 bunch fresh oregano, finely chopped
2 bunches fresh dill, chopped (reserve ½ bunch for garnish and ½ bunch for Tzatziki, recipe below)
Sea salt, to taste
1 pound Feta cheese: ½ cut into 8 slices, ½ crumbled
8 high quality pitas
Olive oil
3 plum tomatoes, de-seeded and sliced
½ head of iceberg lettuce, shredded
1 cup Tzatziki (recipe below)
Method
- In large bowl, combine ground lamb oregano, 1 bunch of chopped dill, salt, and crumbled feta. Shape into flat, oval patties.
- Get a grill hot. Put patties onto grill, and cook uncovered. Flip when necessary—DO NOT PRESS ON PATTIES.
- Brush 8 pita with olive oil and throw on grill. Once slightly toasted, remove pita from heat. Place slice of feta into center of each pita. Place patty on top of feta. Top with tomatoes, lettuce, reserved dill, crumbled feta, and a couple dollops of tzatziki. (Optional add hot sauce.)
Tzatziki Makes approximately 2 cups
Ingredients:
1 large container (17.6 ounce) of Fage Total (or other full-fat Greek) yogurt, (if using plain yogurt, it must be strained)
2 seedless cucumbers, diced
2 tablespoons extra virgin olive oil
½ lemon, juiced
salt and pepper to taste
½ bunch chopped fresh dill
3 cloves garlic, peeled
Method:
- In a food processor or blender, combine all ingredients. Process until well-combined. Transfer to a separate bowl, cover and refrigerate for at least one hour.
